Adventures in Cooking: Lemon Tree Co. Boise
BOISE, Idaho (CBS2) — Adventures in Cooking is a new segment here at CBS2 hosted by me, Ryan Oswald. Some of Boise's favorite restaurants and Chefs teach us how to cook something new to inspire home cooking, save money, and entertain your family and friends.
This time we are at the Lemon Tree Co. on Park Center. The Lemon Tree has multiple locations in Boise, however, what separates the Park Center location is the expanded full kitchen that enables them to offer everything from tacos with house-made tortillas to short rib flatbreads.
Lemon Tree on Park Center offers brunch on the weekends which inspired this Adventures in Cooking. On a personal note, I tried the brunch with family and the short rib hash was absolutely incredible! We paired it with the chilaquiles and I'm already planning a return trip.
For this installment, Head Chef Joe teaches us how to make Shakshuka.
Shakshuka is made of gently poached eggs in a delicious chunky tomato and bell pepper sauce that is popular throughout North Africa and the Middle east.
Recipe:
64 oz. can of Whole peeled tomatoes
2 white onion
2 bell pepper
4 whole garlic
1 jalapeno
2 tbsp salt
1 tbsp pepper
2 tbsp paprika
1 tbsp cumin
3 tbsp oil
2-4 eggs
cilantro to taste
Heat pan with oil then add onion, bell pepper, jalapeno, and garlic. Cook until onions are translucent. Then add tomatoes and spices. Bring to a boil and cook until desired thickness in the sauce.
Preheat oven to 425 degrees. Place shakshuka hot in a cast iron pan and crack eggs into shakshuka. Bake until eggs are cooked to desired temperature. Garnish with cilantro and served with bread and roasted jalapeno.
